I've been a busy bee this weekend, but so excited about all my accomplishments.
I went shopping this week with a focus on buying enough ground beef and chicken to last for the next few weeks. I shopped at Costco & Publix, but ended up with the best deal at Publix.
I bought 4 packages of chicken on sale for $2.49 a pound (better than the costco price) for a total of $15.95.
I also picked up four packages of ground beef for $1.99/lb (also cheaper than costco) for a total of $9.50.
Total cost: $25.45
Total savings: $18.63
This is what I did on Saturday while the kids were asleep:
I got out three freezer bags, filled them with the following:
1. Added OJ, Honey, Salt, Pepper & EVOO with chicken breast cut into strips.
2. Added Greek vinagrette salad dressing, EVOO, Salt, Pepper & halved chicken breasts.
3. Added BBQ sauce, EVOO, Salt, Pepper & halved chicken breasts.
The other 2 packages of chicken (almost 5 pds) went on the grill with some adobo seasoning, chicken grill seasoning & pepper. I seperated these into three baggies and popped them in the freezer.
I browned all the ground beef and separated into 3 freezer bags, with one package browned and put in the crock-pot to make chili.
So all in all I spent about 1 1/2 hours (while the kids took their naps) and prepared 10 meals!!

While I was on a roll, I also measured enough flour, sugar, etc. for a batch of pumpkin bread and a batch of muffins. I just put all the dry ingredients in ziplocks so when the mood strikes, all I have to do is add the wet ingredients.
I'm so excited about my prep - it's going to make cooking over the next few weeks so much easier!
In the fridge defrosting tonight: 1 package ground beef, and one package of BBQ chicken. For dinner tonight: Chili w/ yellow rice (yum)...leftovers got put in the freezer for another night (make that 11 meals).
The rest of the weekend has been spent enjoying our family time, and the beautiful fall weather.
Off to relax now...
