Sometimes it's hard

So the last couple days have been rough...first I had the flu three weeks ago, and I was JUST over it, and Wed night I got this terrible ear ache...even more terrible overnight and the next morning. Sure enough, ear infection! So, needless to say picking good things to eat goes to the bottom of the priority list. But this is a long term thing, so if I have a bad day, I just have to pick right back up again tomorrow! :-)

So far I'm doing good today. I need to go to the grocery store and start planning for next week's dinners. I think I'm going to try one recipe I saw on a show called Christina Cooks (http://www.christinacooks.com/).

Rigatoni with Olives, Capers, (Artichoke Hearts) and Pine Nuts
original from Christina Cooks, slightly modified

1 teaspoon extra virgin olive oil
2-3 cloves fresh garlic-minced
2-3 tablespoons capers-drained and lightly rinsed
1/2 cup pine nuts-pan toasted
Spring or filtered water
1 8 oz. package rigatoni
10-12 pitted olives-minced
Small handful fresh parsley-minced
(On the show I saw she also added chopped Artichoke hearts & Leeks)

Bring a large pot of water to a boil for cooking pasta.

In a skillet, heat oil and sauté chopped leak then add garlic and saute lightly. Add capers and sauté for 2 -3 minutes. Then add chopped artichoke hearts, olives and pine nuts. Simmer 7-8 minutes over medium-low heat.

While the sauce cooks, add pasta to boiling water and cook al dente. When the rigatoni is cooked to your liking, drain well. Do not rinse, but toss immediately with the fresh minced parsley and serve.

Approx. 9 points per serving
