I have learned over the last week or so that I need to be prepared ahead of time in order to stay on track. For instance, I have started bringing a cooler lunch bag to work filled with yummy good for me snacks that I can munch on throughout the day. If I don't do this the cookies and birthday cake that are in the breakroom EVERY DAY will be what I grab when I'm famished at 3:45pm.
Today I packed a big bag of grapes, a snack size bag of baby carrots, grape tomatoes, a banana, fat free cottage cheese and a can of pineapple pieces. Everything in the bag today equals 6 points...that's alot of food! :-)

Roasted Italian Potatoes by Tarah B.
Red potatoes
Olive Oil
Onion Powder
Italian Seasoning
Adobo (this is optional but I like the flavor it adds)
Salt
Pepper
Total Points per serving: 4
I cut the potatoes into cubes, maybe 1/2 to 1" cubes. Then in a bowl I pour olive oil over the potatoes and stir to coat them. Then I add all the seasonings and stir again. I don't have exact amounts because I just do it until it looks well seasoned. I usually add a second helping of seasonings after the first stir just to make sure I got all the potatoes covered. I put these in a long casserole dish. I don't stack them high because I want them all to cook fairly crispy. I bake them at 400 degrees for 90 minutes. They get a bit crispy on the tops, which I like because it's a bit caramelized so I think they are a bit sweeter.
And to answer your question Tarah, a Skinny Vanilla Latte is 2 points. :-)
